Paleo Spanish Rice

coliflorWith the Whole Life Challenge just around the corner.  I am trying to post some of the recipes that Chuck and I use that we developed ourselves.  You will be able to sample this at the Pot Luck and Learn on February 2nd.  It is a Paleo version of Spanish Rice in the The Joy of Cooking, and it is great served with Pork Carnitas.

Combine in a skillet on stovetop:
2 slices of bacon, minced
1/2 cup chopped onions
1/2 cup chopped red pepper
1 clove of garlic, minced
Cook, stirring over medium heat until onions are translucent, about 5 minutes. Add:
1 head of cauliflower that has been riced in food processor
1 tsp of coconut oil
Stir until well coated and cook for 2 minutes. Add:
1 cup of chicken stock
1 can (15oz) of chopped drained tomatoes
1 can (4oz) of green chiles
1/2 tsp hot paprika
1/4 tsp black pepper
Bring to a boil. Stir occasionally, bring to low and let cook until most of the liquid is reduced, about 10-12 minutes.
