Zone Blueberry Muffins
Ingredients:5 eggs 3 ½ Bananas 2 Cups Almond Meal(flour) ½ Raw Cup Honey ½ Cup Coconut Oil, melted 1 Cup fresh blueberries ¼ teaspoon sea salt 1 teaspoon of cinnamon |
Directions: Preheat your oven to 350 degrees.
To start of, gather all of your ingredients together. This is what the French call “Mise En Place” – having everything out and available makes working on any recipe so much easier and quicker. So, once you have everything out and available grab a blender out of your pantry (or whichever place you happen to be storing it), a muffin tin, and paper liners. In the blender add the five eggs (no shells), three bananas -medium ripeness, peeled-, ½ raw honey, ½ cup melted coconut oil, ¼ teaspoon sea salt, one teaspoon of cinnamon. Or to put it simpler, everything but the blueberries. Blend everything together until you have yourself a smooth batter. Then, pour the batter into the muffin tins that you previously lined with paper liners (we usually get 12 – 16 muffins from this recipe). Add the blueberries into the batter; push them down a little bit so they are covered. Bake for 15 – 20 minutes and you are finished.
