5 minute Gourmet Green Beans
Place 1 lb of green beans in a microwave steam bag and cook for 4 minutes. While the green beans are cooking, chop 1/4 cup almonds and make the mustard sauce. For the sauce, whisk together 1/8 cup of olive oil, 1 tablespoon spicy brown mustard, and 1/2 teaspoon lemon juice. When the green beans are done mix beans, sauce and almonds in a bowl, salt to taste.
I usually buy the green beans at Costco in a 2-pack of 1lb bags; you can also get bags of green beans at Frys and Walmart. Make sure to use spicy brown mustard instead of Dijon mustard as most brands of spicy brown are challenge-approved. This is quick and really yummy, even those not on the challenge will enjoy this.
