Week Eight Shopping List and Meals

halibut-in-a-bag-IVFinally!  The home stretch; soon we will see who made the most improvements.  Here is one last shopping list and meals:

Curried Sweet Potato Gratin: sweet potatoes, onion, almond butter, coconut milk, coconut butter
Baked Halibut: halibut, asparagus, leeks, dill- use lemon juice in place of white wine
Sauteed Beef Liver and Onions
Pureed Veggies: cauliflower, rutabaga, parsnip, coconut milk, butter
Roasted Chicken and Veggies: chicken, beets, parsnip, rutabaga, celery root
Zucchini Lasagna: ground beef, zucchini, mushroom, bell peppers, tomato paste, tomato sauce, onion- to
reduce the water released by veggies roast them for 5 min at 325 before adding to dish
Lemon Roasted Green Beans
Fish Taco-less Salad: cod, mango, pineapple, lettuce, onion
Grilled Chicken
Cinnamon Parsnips
Roasted Brussel Sprouts
Roasted Red Pepper
